An amber coloured honey with a full bodied malt flavour.  Jarrah honey is considered a prized honey amongst beekeepers as the forests that it comes from dwindle with dieback and clearing.  Delicious in all cuisine, Jarrah honey is not only smooth on the palate but has amazing healing abilities. Rich with the taste of Spring flowers, wildflower honey is a myriad of flavours as the bees gorge themselves on the first feast of the season.  An infinitely changing taste from year to year.

Summer’s russet coloured honey with a warm stringy plum flavour and gentle hints of coffee undertones.  Redgum honey is famous for its natural heat.  This honey is collected from Bidoon; the Rock and Roll of honeys to set your mouth on fire!

A silky smooth texture is typical of Whitegum honey.  This honey has soft toffee-apple and candyfloss undertones.  Whitegum honey typically crystallises with a fine granule thus making it a favourite for creamed honey.

This honey is collected by the bees during December- February in the forests East of Perth. The Blackbutt tree is of the Eucalyptus family with brilliant white flowers and dark green leaves. Blackbutt honey is high in anti microbial activity (although not as much as Jarrah) and has a rich, thick and almost molasses flavour.  Good to use where a strong honey taste is desired. It is the Black Guinness of honeys!

LAVENDER HONEY

Use to sweeten drinks or mix with freshly squeezed lemon juice to relieve cold symptoms. Tasty drizzled over poached pears as a special desert. Drizzle over toast, crumpets, scones, pancakes, waffles, granola.... the possibilities are endless!
